Tom Calver

Tom Calver is director and cheesemaker at Westcombe Dairy, the family-run Somerset farm renowned for its traditional unpasteurised cheddar. A former chef who trained at Neal’s Yard Dairy, he returned to Westcombe and took over its cheesemaking in 2008. He has since combined traditional methods with regenerative farming, focusing on the relationship between healthy soil, pasture, animals, milk and the character of the finished cheese.
